Breakfasts
Super Seedy Nutty Granola Recipe
I try to have a jar of homemade granola on the go for breakfasts. We have been addicted to this lately and have it with cold or warm milk or yoghurt.
The kids also really enjoy smoothies. We have this green smoothie quite regularly, or we just blitz whatever we have in the fridge. We always throw in some chia seeds for protein and tend to rotate between nut milks, dairy milk and soy milk or coconut water.
Lunches
The kids are at the age where they tend to prefer to pick at a snack plate. I will fill it with things like apples, corn on the cob, rice cakes, sandwiches, carrot sticks, cheese, egg and vegemite wraps, etc.
Dinners
This is one of my favourite winter dinners. It looks fancy but is actually so simple and I like it because it the lentils, tomato and coconut milk can all be canned which means I almost always have them on hand and it is quite inexpensive and quick.
Roast Veggies and Quinoa
We have some variety of Roast Veggies and Quinoa every week. The veggies change depending what we have but the process is the same. I chop all the veggies and bake them in a tray and cook the quinoa in the rice cooker with some veggie stock. To season I will use feta cheese and almond flakes or pepitas or sometimes I will make a quick yoghurt dressing using greek yoghurt, garlic and lemon.

Funny faces
This funny face has a base of mashed potatoes, peas and cheese for hair, corn and carrot eyes and mushroom and capsicum mouth and ears. It is made from a mixture of cooked veggies (usually leftovers from the night before) and raw veggies. This is probably my most successful dinner ‘hack’ for getting some extra veggies into the kids!
Broccoli and Tofu Honey Soy Noodles
My kids would eat this every single night if I let them. I simply prepare the noodles and steam some broccoli, and then cook some tofu slices in a pan and toss it all in some honey and soy sauce or tamari.
