Let me tell you a truth about myself, which you’ll no doubt learn over our time together: I hate cooking! It’s true! I know what you’re wondering… then why am I posting recipes? Because I believe that due to my hatred of cooking, I have been super inventive in creating EASY recipes which we all love! Because while I hate cooking, I love a good meal!! Here’s a Beetroot Risotto I threw together the other day from things that were in my pantry, which took me 40 minutes total, and the kids absolutely loved it!!
Ingredients:
50g butter
2tbsp olive oil
1 onion diced
2 cloves garlic diced
3 tbsp vegeta stock
1tbsp oregano leaves
1tbsp parsley leaves
560g rice
1.5l boiled water
700g jar of sliced, marinated beetroot
Parmesan and sour cream to serve
Method:
1) Fry onion and garlic in the butter and olive oil.
2) Add the rice and stir until it’s all coated in the oil and butter.
3) Pour in the boiled water, add Vegeta, parsley, and oregano.Bring to boil, cover with a lid, reduce heat and leave simmering for 20 minutes.
4) During that time, mostly drain the jar of beetroots, leaving 3-4tbs of the juice in it. Tip the lot into a blender and blend a couple of seconds on medium speed, enough so it becomes little chunks, but not yet purée.
5) Add beetroot, season with salt and pepper. Continue to simmer until rice is soft and the stock has been fully absorbed.
Serve sprinkled with Parmesan cheese and a dollop of sour cream. Though my kids polished their plates with the risotto just topped with grated tasty cheese!
